Let’s talk for a minute about the classics. What does that phrase mean to you? Why is something classic and something else just…so so?

The question is worth exploring. It’s going to shape our efforts in cheesecakeMAX all along the line.

We may not ever get there, but we will strive for that.

And in that effort, we will improve.

Where were we?

Oh yeah, the definition of classic.

In the old days we’d root around in a pile of books and find the Webster’s Dictionary.

You remember, the thick one with the big red cover.

But today we’re going to make a few keystrokes and look at what Wikipedia has to say:

classic:

–Of the first, or highest quality

–Lasting worth

–Timeless quality

Lastly, and this is important…

–something that exemplifies it’s class.

What are some food combinations that have endured?

Think about macaroni and cheese. Chicken with rice. Duck with orange. Hot dogs and sauerkraut. Green beans and almonds. Mashed potatoes and gravy. Peanut butter and jelly.

Pancakes and bacon and maple syrup.

Creamsicles.

Why are they so great?

The flavors work together!

Not only do they work together, they mix back and forth to create an experience where each food tastes better than it would on its own. And together they are…wow.

Together they create something new.

Flavor combinations that good….resonate. A food you’ll think of suddenly, out of nowhere. I want that.

Buffalo wings with celery and bleu cheese dressing.

As Keanu would say….”Whoa.”

Remember kiwi pizza? The donut burger? Atari?

No?

Exactly.

The classics are classic for a reason.

We’re not going to force anything. We’re not going to put together flavors that don’t work just so we can say we’ve made something new.

We’re going to take flavors that work well and maximize the taste of each, then put ’em together.

And we want those results to look good, but that’s not the most important thing…

Which leads us to our motto:

Not food as Art

Not food as Architecture

Not food as Fashion

Not food as Status…

FOOD as FOOD.
